Baldo Rice

Baldo rice is classified as superfine, its grain is large, translucent, and very firm; a rice typical of Vercelli, it is a cross between Arborio rice and the Stirpe 136 variety.

This is a long-grained japonica rice, characterized by a crystalline structure, usually used for risottos, but it holds its shape well after cooking, making it also ideal for rice salads.
