The kernel of nutmeg is used. It has an unmistakable, sweet, and aromatic scent with subtle notes of resin and camphor. Whole nutmegs keep for a long time, but if grated, they tend to lose their intense aroma rather quickly. It's therefore advisable to buy whole nuts and grate them by hand immediately using a small grater.
