Hulled spelt only undergoes the separation of the husk, the external cortical part which has no particular nutritional value.

Spelt is a cereal considered to have high biological value, in fact it contains many vitamins as well as mineral salts and zinc.

It can be cooked alone, in salads or in combination with other cereals or legumes.
